Many thanks for all your suggestions. I can see you are very interested in this project! This is very encouraging! It is nice that you suggested a repo but since today we have one on savannah ;)

management system to host an online git repo, track bugs, have a wiki,
and so on? On, or maybe?
Setting up an own GitLab or Trac installation maybe?

Notice that GitLab is free software and quite more state-of-the-art than
savannah or Trac, but almost the whole world is using Github now though,
and the data of a project in Github can be easily exported. E.g. its
wiki is a repo itself which can be converted to other formats like PDF
with tons of tools:
