What I do is:
1. plug-in the device ;-)
2. Hotplug loads the neccesary drivers (I have usb dongle)
3. Load rfcomm and l2cap modules:
#modprobe rfcomm
#modprobe l2cap
4. bluez module should automatically get loaded
5. Run hcid and sdpd daemons:
# hcid
# sdpd
6. Discover your phone maccaddress:
# hcitool scan
7. Connect the device to the socket:
# rfcomm bind /dev/rfcomm0 <macaddress> 1

Now you can use your usual scripts to connect over /dev/rfcomm0 port.
