The default user/password is any-doc/any-doc which you find here:

        http://wiki.gnumed.de

Note that you need to bootstrap a GNUmed database before you
can use the application.

That depends on the needs.

You first define the threats you see and then devise
strategies to protect against them.

The first steps after installation would be to define your
own local user, disable any-doc, and change the password for
the default database owner.
