But now new issue, I have successfully installed GNU Health using the pip method, I can start the server (trytond and postgresql), when I try and create a profile from the Tryton client I am getting 'Database: Could not connect to the server' error. Your assistance will be greatly appreciated.

Do you login to your desktop environment with gnuhealth or with another
user ? The gnuhealth user should be used only for running the server.

Make sure you run the Tryton client with the user that connects to the
Xwindow .
