Dear Odile,
   The system will pick up at the evaluation time the hp (health
professional = profesionnel de santé) related to your user. The user, on
which you logging, is related to the hp Cordara, Cameron.

   The idea is that every hp is related to a single system user. That way,
the system will automatically stamp the hp as the one creating/signing the
evaluations.

    You can see that every hp is related to a party, and each party is
related (or not) to a system user.

The data from the demo database can't be changed.
To create a new health professional, kindly follow the steps described in the official GNU Health documentation

https://en.wikibooks.org/wiki/GNU_Health/Health_Professionals
  
   - Select (or create) the related party
   - Associate an internal user (login user) to the party
   - Define the health professional list of specialties
   - Set the default or main specialty
