still gives me a white background.

Try specifying the -q and --no-site-file options before -bg COLOR.

And how would I specify that
'gainsboro' should be the default background color when emacs is not
started from a shell?

Put this in your ~/.Xdefaults file:

Emacs*Background: gainsboro
