Thank you! That didn't actually work, but it woke me up and I realized that
by adding
("[/.]c\\(?:on\\)?f\\(?:i?g\\)?\\(?:\\.[a-zA-Z0-9._-]+\\)?\\'" 'text-mode)
to the beginning of auto-mode-alist I could prevent the troublesome behavior.
Not the nicest solution, but it will do for now.
