The C-x 8 method is complete, but somewhat cumbersome. You might
prefer using input methods, eg

C-\ italian-postfix

allows you to type

e'

and have it automatically be inserted as é

Thereʼs a whole host of input methods available, including ones that
cover all the latin accented characters, rather than just the Italian
ones. (info "(emacs)Input Methods") describes the details (including
how to activate input methods automatically).
