Since eps (as well as pdf) is a vector format you can scale it up w/o
any loss of
quality (unlike jpeg or png which are bitmaps).
EPS size (not "resolution") was selected to be convenient for inclusion in
documents printed on letter/A4 size paper. It would still look great
(enlarged) on
Arch E size poster.
