If you accept those updated certificates you should only be re-prompted
when they change again.

Melpa and Elpa both use certificates from Letʼs Encrypt, which renew
every 90 days, so itʼs normal to see warnings from the Network
Security Manager about that.
Itʼs possible to disable that, but I would not recommend it.
