That's what I do, unless the triple stop is clearly a combination of
voices (which is common in Bach -- it'd probably have a top line with
an accompanying double-stop, which you'd notate as
<b {\voiceTwo <e fis,>}>
(I _think_ that's how you'd tell Lilypond to do it; look at the
tutorial/refman to check if you're interested).
Since it's an original piece, you could ask the composer (or yourself, as
the case may be) if he wants it specially notated. But a simple <a b c>
is probably fine.
