If you read the section on Tuplets in the on-line manual, you will find 
a link
at the end: "See also TupletBracket 
<http://lilypond.org/doc/v1.8/Documentation/user/out-www/lilypond-internals/TupletBracket.html>". 
This link will give you a list of all
properties that are available for tuplets, among others one called
|number-visibility|, so you should just do
\property Score.TupletBracket \set #'number-visibility = ##f
