Use pattern matching! ;-)
In normal music, you have
\context Staff{ ... } or \new Staff{...} and set the midi instrument
using \set Staff.midiInstrument="xxx" .
For chords, you have \context ChordNames{...} or \new ChordNames{...}
so why not try \set ChordNames.midiInstrument="xxx" ?
