Read manual chapter 6.6, Polyphony, carefully.
2 things:
- You probably want \voiceOne / \voiceTwo instead of \stemUp/Down
- When using << {...} \\ {...} >> (i.e. with a \\), \voiceOne and \voiceTwo
are insterted implicitly.
