In Adobe Reader it is necessary to switch from Hand Tool to Text Tool to copy text (Tools -> Basic -> Select Text).  Note that the apostrophe doesn't copy to please Lily.

And no disrespect, but I think Thibault is spot on with his first
sentence. The lilypond documentation is the size of a small novel!
Finding what you're looking for isn't easy.

Personally, I find it easier to work with the one page html version and just let the browser search for hopefully good keywords.
(The pdf version does not work as well due to the search being slower and I cannot seem to copy text from it..)
