You also need to override LyricHyphen #'minimum-distance.
To get the hyphens to print you need that to be greater than
LyricHyphen #'minimum-length, which defaults to 0.3.
See section 7.3.3, Hyphens and Extenders.
FWIW I use

{
\Lyrics
\override LyricHyphen #'minimum-distance = #0.5
\override LyricSpace #'minimum-distance = #0.5
}
You may want bigger distances.
