\stemUp is not the best command here, use \voiceTwo
or
guitar = << \voiceone \\ \voicethree \\ \voicetwo >>
(Not very serious:) the << {…} \\ {…} >> construct causes a lot of
problems, sometimes I feel we should delete any hint to it in the
docs. ;)
