I tried this, but unfortunately it does not work:

\override TextSpanner.bound-details.left.text = #text

stopText = \stopTextSpan
\relative {
\startText "rit"

I don’t know why. The \startTextSpan in the music-function causes this error:
syntax error, unexpected EVENT_IDENTIFIER
This works, however it is only half way to the solution:
startText = #(define-music-function (parser location text)(markup?)
#{ \override TextSpanner.bound-details.left.text = #text #})
\relative {
\startText "rit"
b1 \startTextSpan c
e,\stopTextSpan
}
