My apologies. On further research, the feature to anchor slurs to stems existed way before I knew of LilyPond, just no longer available.

Because they have to be done for each slur individually?
At any rate, it would be easier to, say, \override Slur.attachment =
#'Stem (as opposed to #'NoteHead).
Just brainstorming.
