First, I strongly recommend you to upgrade to VisualDSP 5.0: they've done some major improvements in the lwIP port for Blackfin as well as the Ethernet driver.

 

Second, I guess an article that can interest you a lot is the EE312: http://www.analog.com/UploadedFiles/Application_Notes/682451633EE_312_Rev_1_03_07.pdf . In that PDF, they describe in detail how to build complex applications (=applications that use PPI, SPI, ...) with lwIP.
