Did you apply the other patches that come with MXE?
Your build seems to fail linking perf-test.exe, which is part of the
poppler tests. Those are normally disabled in the MXE build (precisely
because of not properly picking up static dependencies). However, for
-DENABLE_TESTS=OFF (which you specified) to take full effect, you need
to apply a patch which, I think, is in MXE's src/poppler-1-win32.patch.
