See the "-D" switch.
For example, to take a diff,
cvs diff -D "2002-10-17 23:56" -D "2002-10-18 15:30" > foo

65541:address@hidden:~/cvs/nano/HEAD$ cvs up -D "2002-10-17 23:56"
seems to work too.
