Isn't this whole issue a bit confusing? I mean, changing EDITOR only works
until you try to set it though edit?

Since Matlab's edit does not allow setting the value for EDITOR, I'll suggest
to drop that option from our edit. It makes things so confusing... let's have
the text editor defined in a single place, and make that place be EDITOR.
