Follow-up Comment #1:
Octave does not implement a "latex" interpreter, just "none" and "tex".
Octave can pass the strings through to the output, but it is up to the user to
make sure those strings are correct. The "gnuplot" toolkit does this for the
user automatically, so that is one option. Otherwise, the strings need to be
set correctly by the programmer for correct interpretation by latex. See bug
#50130 where this issue, with the same example, has been discussed.
