This isn't advertised in the GUI anywhere yet, but on startup Pan
looks for the boolean config key /Pan/Compose/do_spellcheck.
So look for this in your config file and set the value to 1 or 0..

<value key="do_spellcheck" type="b">0</value>
</section>

(humm, that should be "true" or "false" instead of "1" or "0",
looks like a buglet in the config writer... :)
