Of course the paparazzi autopilot can fly any wing, in fact most of the aerial platforms are wings more or less (funjet, twinjet etc are essentially flying wings)
Get a tiny 2.11 or a TWOG with a gps unit for the start.
The Paparazzi autopilot is a proven and dependable autopilot without this meaning that i bash ardupilot, it could even be better than paparazzi, it is just that i don't have any experience on it.

I agree that the bigger the plane the easier for the autopilot
but as it has already been mentioned if you haven't flown big and heavy air crafts stick with a smaller one (less than 2kg)
It is amazing how much destruction they can cause when they crash.
