The subject line is rewritten by the spamd daemon and not the
spamass-milter program.
This is done using the "rewrite_header Subject" option found in the
user_prefs file.
You will need to remove this option on the configuration for the
upstream server or if the servers are sharing the same user
configuration you will need to overwrite individual options on the
upstream server by adding a "rewrite_header Subject" option to the
global local.cf file.

On the initial server it's logged as coming from the milter.(even if
done by spamd)

On both the initial and upstream rewrite_header is set and either will
rewrite a subject header to have the spam prefix ( *****SPAM*****) if
it exceeds the threshold.
However in a non spam scenario, on the upstream it changes all the other
headers except subject.
All this is done in the global local.cf file, users are virtual.
It's not a biggy, but it looked to me like a rare case oversight seeing
as the other headers are rewritten successfully.
