Type
M-x customize-variable RET LaTeX-math-list RET
Then read the variable description and click the "INS" button for
inserting an element into the list. There will appear a few widgets
corresponding to the elements mentioned in the doc string of the
variable where you can specify a shortcut. Once you are done editing
click on "State --> Save for Future Session" for saving the variable.
