I've got diary-mail-address set to my riseup.net address and diary-mail-days set to the default of 7.

When I try M-x diary-mail-entries I get:

post: no mailbox in address, only a phrase (July 18,) July 18, continuing... Thursday: loses; [USER] 550 Invalid recipient: <Thursday@eddie.fios-router.home> 2024: loses; [USER] 550 Invalid recipient: <2024@eddie.fios-router.home>
post: 1 address unparsable, 2 addressee undeliverable
send: message not delivered to anyone

What am I doing wrong?

That looks like an error from the nmh utility "post", and not something from Emacs.

You probably need to check how Emacs is invoking post and populating the arguments (and perhaps confirm if you want to be using post at all).
