For me, C-c C-e lstlisting RET caption=feed RET inserts
\begin{lstlisting}[caption=feed,label={lst:3}]
\end{lstlisting}
as it should be.

What exactly have you typed and did you try with emacs -Q (and then
loading auctex manually without customizations)?
