Hello Ludo,

Does the :100 server show up when you do 'xpra list' after the command?

If so, can you try the following commands to see if it works:
$ guix environment --ad-hoc xpra --pure -- xpra attach :100
And then on a different terminal:
$ DISPLAY=:100 gui-program
