You should set the variable 'dired-listing-switches' to the same string it
holds currently (probably "-al"), but without the 'a' (i.e., change it to "-l").
As for the "simple alt-x command to show them when required", well, that's a
bit trickier. You should write a function (or a macro) that changes the
variable (either locally or globally) and re-reads the directory listed in the
dired buffer.

Hello,
Does anyone know a way of hiding dot files when in dired mode?
Preferably as a default with a simple alt-x command to then show them
when required.
