You can rename your current eshell buffer and then open a second
one. For example:

M-x eshell RET

M-x rename-buffer RET *eshell-2* RET

M-x eshell RET


It seems that it is also possible to call `eshell' with a prefix
(`C-u M-x eshell RET') in order to get a new eshell buffer. But I am
not sure whether this feature is new in the CVS version.
