i've just cross compiled Gnu OS (v 0.2) in an empty ext2 partition
in the first slice of the first ide disk, and changed the
/boot/server.boot according to mi initial configuration (ext2
   filesystem).

Are you sure that you cross-compiled GNU 0.2? I.e. the stuff that
exists in ftp://ftp.gnu.org/gnu-0.2/src. If you did, than you really
should install Debian GNU/Hurd because GNU 0.2 is old and dead. You
can find instructions on how to install Debian GNU/Hurd at:
http://hurd.gnu.org/install.html

After booting gnu os is loaded in memory, but as system boot the
kernel goes in idle state until i press a key. Now an orrible
   kernel panic occours:

This is a known bug.
