thank you for your answer!

Following your advice, I have set

(setq mm-coding-system-priorities '(utf-8))

in my .gnus-File. I now would naïvely expect, that every outgoing
message is forced to be UTF8-encoded. Nevertheless, I see in the header
of a sent message

Content-Type: text/plain; charset=us-ascii
