On Mac OS, applications are self-contained : you can place them anywhere in your files hierarchy, and placing them in the Applications folder is a mere convention.
So you can have as many LilyPond versions as you need provided their names are different, as shown below. You may also use the version number in the name, such as 'LilyPond 2.21.13’.
In Frescobaldi, just add the versions you use in the preferences panel, and you can switch from one to the other seamlessly.

Is it possible (not advisable?) to have multiple versions of Lilypond concurrently installed on the same machine?
I'm on a Macbook Pro (Big Sur).
