Follow-up Comment #3:

noting the limited display in Worskpace is still the same in Octave 6.4.0, but
the Variable editor has been part of octave for a while now.  As the
workaround was pushed to core, and no one has objected to comment #2 in 5
years, closing as Won't Fix as suggested.
