I didn't have time to look up where these commands were earlier,
I found them by getting up View->Command Center and then typing words
like Ossia to search for...

Staff->Ossia menu

You create an Ossia staff and then put Start Ossia when you want it to
start being typeset and End Ossia where you want it to stop.
