well you frequently see piano music with 4 or 5 ledger lines and both
hands could have the same range (you see both changing to treble clef or
to bass clef). It's not crucial, it's only a hint, not so much use for
instruments with very large ranges.

Start from a piano staff, add an extra staff for pedals for organ. The
part-name should be the same for all the staffs and the MIDI channel too
(I'm not sure that adding the instrument preserves this however - it
needs to be scripted).
The LilyPond MIDI instrument needs to be emitted (I guess once)- this is
done when you select the MIDI instrument in the MIDI tab of the staff
props dialog.

I think LilyPond may assign the same channel to these - needs testing...
it may be that it will assign one per staff... needs testing...
