You're right, there is a .hidden file there.

Okay, so I can now set the default editor in gworkspace (and for some
reason I can now open files from the File menu in Ink), However, I
haven't figured out how to open a file from gworkspace's file
viewer. With Ink set to the default editor, double-clicking a file
does nothing, also typing 'o', or selecting open file from the popup
menu, does nothing. Is that supposed to work that way? Is there any
documentation for gworkspace anywhere?

No, there is no documentation because my English is too bad to write it ;-)
Regarding your problem: Ink is not good as default editor because it opens only files with a "rtf" 
or "txt" extension. I'm using nedit, that is, a wrapper for nedit, that you can find in the 
"Apps_wrappers" directory in the GW sources.
