Swami is a SoundFont editor that uses FluidSynth as its synthesizer.
Its been known to run on Mac OS X and Windows for that matter, but isn't
currently packaged for them and must be built from source.  Swami 0.9.4
is the latest, but there is a development version in the works which
will be much more advanced, when released.  If you want to have a look
at this project, it can be found here: http://swami.sourceforge.net

Keep in mind, that it may not be as easy to install as one would like.
Hopefully this will be remedied at some point in the near future.  You
are welcome to join the Swami-devel email list though, if you have any
questions on getting it installed, or otherwise.
