Debian's installer, which I think ubutu is using as well, does have a simple 
user interface.  The source is a bit obtuse, in my opinion, it has 34775 
files.

For the source:
svn co svn://svn.debian.org/svn/d-i/trunk debian-installer 

I think the best bet would be to create the scriptable installer.
