Matthias,
you are not telling us which version of octave etc. you are using.
There used to be a Mac OS X version of figure.m in octave-forge
http://octave.cvs.sourceforge.net/octave/octave-forge/extra/MacOSX/?hideattic=0
which (according to a commit message by yours truly) shouldn't be necessary
anymore since octave's figure.m checks the value of GNUTERM instead of assuming
X11.
Try setting GNUTERM to aqua to see if that solves your problem.
Unfortunately, I haven't been able to stay updated on octave's rapid
development over the last 18 months or so and can't really provide any better
suggestions than that.
