It just occurred to me--would it be possible to install the FreeBSD version on an Intel Mac and use it as a command-line only Lilypond? FreeBSD is what they build OSX on, right? My Intel Mac is at work so I can't try it at the moment, and the Mac at home is a G4 so that definitely wouldn't work.
(apologies if this is a ridiculous proposition--I'm not a developer so I don't have any idea...)
