Given that LilyPond is a Gnu project it certainly makes more sense to me to use IRC --- the whole respecting your freedom thing.

+1 for IRC. 

In my GSOC with Mozilla last summer the vast majority of our communication happened on the project's IRC channel (...which is also the case for all of that project's communication in general).
