Follow-up Comment #29, bug #50640 (project octave): For a reasonable reference on disp/display see http://www.mathworks.com/help/matlab/matlab_oop/displaying-objects-in-the-command-window.html. This seems to indicate that classes might want to override disp rather than display function. It is display that takes care of printing out the variable name and '='.
