It's a source code control system that is used by a lot of open source
projects.  Developers "check out" code from the CVS archive to work on
it, then do a "check in" when they're done.  CVS gives you a history of
changes and allows you to see the code from earlier versions of the program.
People who want to build the latest unreleased version of the source code
can pull it out of that same CVS archive.  Recently the developer of Pan
asked people to try out some radical changes he'd made...it's in CVS but
not in either a beta release or production release yet.  It's worked
pretty well for me so far, though there have already been some fixes
that I haven't pulled down.
