I just tested this. I created a passage with a couple of (Denemo) bars
with cadenza time put the cursor on one of the notes, then executed the
hide timesignature command and it operated on the initial timesignature.

My guess is that perhaps you are being deceived by the circular blue
pointer mark which appears on the object at the mouse position. You have
to click so that the rectangular Denemo cursor is on a note - check by
looking at the status bar at the bottom, it should say Note not Time
Signature Change.
