You have to define the symbols in `prettify-symbols-alist', e.g., define
some `ub/prettify-symbols-alist-latex' as

  (("\\\\alpha" . ?𝛼)
   ("\\\\beta"  . ?𝛽)

and then do

  (setq prettify-symbols-alist ub/prettify-symbols-alist-latex)

in TeX-mode-hook.
