You have to know how to get started.

Sure. It looks like 18 variants is the max in emoji-land.

I think emojis are more in the area of "I know what I want when I've
seen it".
I've now actually had a look at what my Android phone does here, and it
seems quite nice, and is probably what people are used to.
It pops up a long field of emojis to choose from, grouped by theme:
First you get all the smileys, then all the people, then "animals and
nature", and then "food and beverage", etc.
When you long-hold the people, you then get to see the (up to) 18
variations per person.
I didn't know 😹 existed before I saw it, and I don't think I would have
navigated to it via a textual interface.
Perhaps somebody who uses emojis a lot has some ideas for how this
should be in Emacs. 😎
